Fish Cooking Guide
- Pat fish dry and let it reach room temp before cooking.
- Season while it warms.
- Cook to 167°F internal temp.
- Rest under foil for 5 min.
Cooking Times
- Whole (4–6 lb): Roast 20 min/lb at 400°F
- Whole (1–2 lb): Pan sear or grill 5–7 min/side, or roast 20 min/lb at 400°F.
- Fillets: Roast 20 min/lb at 400°F, grill 10–20 min total, or pan sear 6–8 min/side.
