Fish Cooking Guide

  • Pat fish dry and let it reach room temp before cooking.
  • Season while it warms.
  • Cook to 167°F internal temp.
  • Rest under foil for 5 min.

Cooking Times

  • Whole (4–6 lb): Roast 20 min/lb at 400°F
  • Whole (1–2 lb): Pan sear or grill 5–7 min/side, or roast 20 min/lb at 400°F.
  • Fillets: Roast 20 min/lb at 400°F, grill 10–20 min total, or pan sear 6–8 min/side.
