Cedar Grilled Trout

Time: 25 minutes
Servings: 4-6

Ingredients

  • 2 x 1lb Steelhead fillets
  • 1 tbsp cracked pepper
  • 1 tbsp herbed salt
  • 1 tbsp olive oil
  • 1 cedar plank
  • 4 lemon wedges

Instructions:

  • Soak cedar planks in warm water for 15 minutes
  • Preheat grill to medium heat (~400 degrees F)
  • Remove planks from water and place steelhead fillets skin-side down on top - 1 fillet per plank
  • Mix mustard cracked pepper and herbed salt. Lightly coat flesh of both fillets
  • Drizzle olive oil on both fillets
  • Place cedar planks directly on grill and cook for 15 minutes
  • Let fillets rest for 10 minutes
  • Finish with sprinkle of salt and serve with lemon wedges
  • Pairs well with a horseradish aioli sauce 
  • Enjoy!
